Sakai Takayuki was founded in Japan in the 1950s, and today offers you quality knives that are both modern and authentic. The company has been around for a long time, benefiting from the know-how of the old-time blacksmiths in the Sakai region who made the famous katanas.
The nakiri is a knife for cutting vegetables! With it, you can chop, slice, dice or stick vegetables with ease. However, it should not be used on hard foods such as squash.
This nakiri knife features a typically Japanese damascened blade. This technique consists of forging the core of the blade with a rigid steel, then covering it with several layers of softer steel to create optimum balance. This also provides better protection for the core, making the blade more supple and less brittle in the face of micro-shocks.
What's more, damascus is a real aesthetic asset! The layers are superimposed to form unique patterns that can be admired throughout the blade. This technique lends elegance to your knife!
Japanese VG10 steel has been selected for this blade: this alloy is highly appreciated in the kitchen. It has a high carbon content of up to around 1%, for an efficient cutting edge. In fact, carbon is the essential element for increasing a steel's hardness, since a high level of hardness retains its sharpness over the long term. The blade of this knife achieves a hardness of 60HRC on the Rockwell scale, making it a durable, high-performance knife.
The VG10 steel also contains around 15% chromium, which increases corrosion resistance. However, this blade is still enriched with carbon and therefore needs to be carefully maintained to avoid oxidation.
Finally, the core is surrounded by 33 layers of softer steel that add protection to the core as well as greater strength.
The blade of your Japanese knife has been polished to achieve a refined mirror-effect finish. For a touch of authenticity, it has been hammered for added contrast. The hammering is useful because, like the dimples, it helps prevent food from sticking to the sides when cutting.
This Sakai Takayuki knife features an oak wood handle: a durable species renowned for its strength! In fact, this wood is resistant to shock, vibration and humidity, making it difficult to warp.
For an original design, the handle of your Japanese knife has been lacquered in the Urushi style: an ancestral technique that is very popular in Japanese art, particularly for decorative objects. A black varnish contrasts with the rest of the lighter-colored handle, and gold tips are added to draw a starry night. This knife represents Japanese poetry, with its many contrasts symbolizing day and night.
With its octagonal shape, this handle can be used by all cooks, left- and right-handed alike! Its ergonomic grip makes it easy to handle, especially over long periods of use.
Finally, wood putty is added to fill the small gaps where the blade meets the handle. As a result, it's watertight and small food items can't slip inside.
To maintain your knife, it's important to wash it by hand only, using a sponge and a mild detergent. Once washed, dry it quickly and store it in a dry place. Do not use the dishwasher or leave it to soak in the sink.
