Sakai Takayuki is a company with ancestral know-how
Sakai Takayuki was founded in the 1950s. It is located in the town of Sakai, the Mecca of Japanese cutlery: that's where the name comes from. Sakai was the place where blacksmiths made katanas for the samurai.
They perfected techniques that were passed down through the generations, until today's companies, like Sakai Takayuki, have inherited them. With this experience and know-how, the Japanese company is able to offer you quality Japanese knives, suitable for chefs and private customers alike.
A superb Western handle in Spanish mahogany
This Damascus Western 18cmsantoku knife features a Western-shaped handle for excellent grip. The handle features a finger rest at the heel, for added comfort, especially during long cutting sessions.
The handle is made from Spanish mahogany, a beautiful reddish-brown wood renowned for its durability. As wood is a living material, the veins visible on the surface of the handle are unique to each piece. Mahogany is a light, yet shock-resistant wood. To protect it, a transparent glaze is applied.
A stainless steel bolster links the blade to the handle, and 3 stainless steel rivets secure the handle to the full tang blade. What you have here is a sturdy, reliable santoku knife.
This Japanese santoku knife has a damascened blade.
Your santoku features a superb damascened blade, which means it's composed of a rigid alloy core covered with alternating layers of softer steel. The damascus layers give the blade a unique pattern and character.
Damascus not only has an aesthetic function in the design of the blade, it also ensures better balance. The core is made of VG10 steel, a high-quality Japanese alloy containing almost 1% carbon that has been ice-hardened. Carbon is the essential element for increasing the hardness of an alloy, and this high content coupled with ice hardening enables the blade to reach 60 HRC on the Rockwell scale.
Thanks to these properties, VG10 steel gives your blade a sharp, long-lasting edge that doesn't require regular sharpening sessions.
VG10 steel also contains around 15% chromium, giving it good corrosion resistance. However, as the alloy contains a lot of carbon, your blade will need to be maintained with the utmost care to prevent oxidation.
The rigid core is then surrounded by 33 alternating layers of softer steel, creating the damascus. This balances the strong rigidity of the core, adding suppleness to make it less brittle. Thanks to the outer layers, the blade is less sensitive to micro-shocks when cutting, and therefore less susceptible to breakage. Indeed, the harder an alloy is, the faster it tends to break. Damascus compensates for the hardness of the core.
The top of the blade has been hammered, providing a superb contrast with the damascus layers. Hammering also has a practical aspect, as it prevents cut food from sticking to the blade. It acts in the same way as honeycombs.
This Japanese knife should be washed by hand only. It should not be soaked in the sink or put in the dishwasher. When washing, take care not to get the handle wet, and use a mild soap and non-abrasive sponge. Once the knife has been washed, dry it immediately and store it in a dry, moisture-free place.
