The Japanese King S-1 6000 grain sharpening stone, size L, is ideal for sharpening knives made of very hard steel.
Its #6000 grit is considered very fine, making it the perfect accessory to reveal the cutting capacity of your knives by polishing their edge. It is therefore particularly recommended for high HRC knives, as they will be able to withstand such a finish (unlike "softer" knives).
King stones are made in Osaka, Japan.
How to use your King stone
Soak the stone in water for 5 to 10 minutes. Then keep it moist throughout the sharpening session (this will create a slurry on contact with the steel of the knife).
The knife blade should be at an angle of between 15 and 20 degrees to the stone. The hand holding the handle should have thumb and forefinger on the blade to stabilize the gesture. Hold the blade with your other hand to distribute the pressure evenly.
Sharpen the blade on one side, keeping the edge towards you and pushing the knife against the stone with more pressure than when you bring it towards you. Use the reverse procedure to sharpen the other side. To find out if one side is sharp, test with your finger on the underside of the blade. If you feel that it's rough, you can sharpen the other side (taking care not to cut yourself).
After sharpening, wash the knife in hot water and dry it thoroughly.
The whetstone sits on a handy base to hold it in place while sharpening.
