For this range, Kotai knives are made in the city of YangJiang, in Guangdong province in southern China. This province is historically renowned for its knife-making tradition, which has existed for over 1500 years.
This 20cm chef's knife is the most widely used knife in the kitchen. It can be used for all cuts and all foods: boneless meat, fish, vegetables, fruit, herbs...
The 440C stainless steel blade is mainly composed of carbon and chromium, making it more resistant to corrosion than other steels of the same quality. It is widely used in the manufacture of knives.
With a hardness of 60 on the Rockwell scale, the cutting edge is durable and easy to maintain. The steel achieves such hardness because it has undergone a special cryogenic treatment specific to the brand. V-shaped blade sharpening at an angle of 15° ensures clean cuts without damaging food.
The blade's hammered finish creates air bubbles between the steel and the food, preventing it from sticking to the blade.
The handle is made of black pakkawood, a composite of laminated wood and resin, all heat-compressed. It is highly appreciated in the kitchen for its strength and durability. It is antibacterial and resistant to temperature variations. Its round shape is suitable for everyone.
The knife features a stainless steel bolster that links the blade to the handle. The base, also in stainless steel, is engraved with the brand logo.
All Kotai knives come in a beautiful bamboo box, with a sheath (also known as a saya) to protect the blade.
As for maintenance, we strongly advise against using the dishwasher. Instead, wash gently by hand in lukewarm water with a little soap. Afterwards, simply wipe the knife dry with a soft cloth before storing it in a dry place.
