The Kotaiparing knife is a must-have!
For this range, Kotai knives are made in the city of YangJiang, located in southern China's Guangdong province. Historically, this province is famous for its knife-making, where the art has been practiced for over 1500 years.
This 10cmparing knife is the second most widely used knife in the kitchen! It is extremely useful for small and precision cuts, whether or not they are made on a cutting board. In fact, its small size means you can use it with food right in your hand.
The blade is made of 440C stainless steel, an alloy with a good ratio of carbon to chromium for better corrosion resistance. It is one of the most frequently used stainless steels in knife manufacture.
It has a hardness of 60 HRC: the cutting edge keeps well and is very easy to sharpen! The steel achieves this level of hardness thanks to a special cryogenic treatment specific to the brand.
The blade is sharpened in a V-shape at an angle of 15°C on each side, guaranteeing clean cuts that won't damage the flesh and fibers of food when cut. You'll have the sensation of a sharp edge from the very first use!
It has a hammered finish, and the dimples can be seen all over the top of the cutting surface. Although aesthetically pleasing, this hammering creates micro air bubbles between the steel and the cut food, so that it sticks less to the blade.
The handle is made of black pakkawood. Pakkawood is a composite material much appreciated in the kitchen for its durability and resistance! It's made from laminated wood and resin, all hot-pressed together. It is therefore antibacterial, resistant to temperature variations and humidity.
Its round shape ensures a good grip and, for greater ease of use, it has been polished. And it's suitable for both right-handed and left-handed users! The handle is completed by a stainless steel bolster that links the blade to the handle. At the end of the bolster is a stainless steel cap engraved with the brand logo.
All Kotai knives come in a beautiful bamboo box, with a sheath (also known as a saya) to protect the blade.
As far as maintenance is concerned, we strongly advise against using the dishwasher. Instead, wash gently by hand in lukewarm water with a little soap. Afterwards, simply wipe the knife dry with a soft cloth before storing it in a dry place.
