Tamahagane is the name of a traditional steel used in the manufacture of Japanese swords. It's easy to deduce that these knives have a cutting quality similar to that of a Samurai sword!
The excellent sharpness of this knife is due to the type of steel used in the composition of the blade. This 21cm blade features a 3-layer VG5 steel core. For connoisseurs of Japanese knives, this steel has the same qualities as VG10, but contains slightly less cobalt. However, VG5 is more resistant to corrosion, an advantage for all cooks.
