Description

This Sujihiki Tamahagane knife, more commonly known as an ocidental slicing knife, is from the Kyoto range.

The Tamahagane brand is named after the traditional steel used to make Japanese swords. It's easy to deduce that these knives have a cutting edge worthy of a Samurai sword!

The excellent cutting quality of this knife is due to the type of steel used in the composition of the blade. In fact, with a core of 3-layer VG5 steel, the blade has the same characteristics as VG10, except that VG5 is more resistant to corrosion, a significant plus for any cook. The quality of the cutting edge is identical to that of the VG10, which means it's excellent! Everyone wants to make cuts without forcing, and this is perfectly possible with hard, solid VG5 steel.

This VG5 core is covered with 63-layerSUS410 steel , softer and more resistant to corrosion. These outer layers create the damascene patterns that make Japanese knives such works of art.

The blade achieves an HRC hardness of 59 on the Rockwell scale. This means you'll need to sharpen your knives far less often than knives with a lower HRC rating, and their durability is increased tenfold.

Tamahagane has chosen micarta for the handle, a blend of paper and resin. Micarta is extremely robust: it is not affected by water or temperature variations. It is also highly hygienic, a considerable asset in the culinary field.
