Masutani Japanese knives are handcrafted on Japan's Echizen coast. They are the perfect embodiment of Japanese tradition, inheriting ancestral skills from the famous blacksmiths who fashioned the samurai's katanas. When it comes to cutlery, Japan transforms its knives into veritable works of art, ranging from authentic styles to the most modern.
Masutani, a passionate craftsman, works in his workshop with his small team. He shapes each piece by hand and presents them in attractive, colorful boxes, perfect as gift ideas!
A Japanese santoku knife with authentic style
This santoku knife features a San Mai structure, a typically Japanese technique meaning "three layers". This method consists of forging a core of rigid steel, then covering it with a layer of softer steel that folds in on itself to envelop the core.
The core of this blade is made of VG1 steel, enriched with 0.95% carbon. This element reinforces the hardness of your blade, ensuring its durability. Your blade thus achieves a hardness of 59HRC on the Rockwell scale, guaranteeing a high-performance edge that's easy to maintain, even with spaced-out sharpening sessions.
The core of the blade is then enveloped in a layer of stainless steel, forming the two additional layers (as this layer folds in on itself). These layers balance the hardness of the rigid core while protecting it.
Your handcrafted Japanese knife has undergone a tempering process: it has been heated in a salt furnace to a temperature of 800°C, then cooled by hanging in front of a fan. This step considerably increases the strength of your Japanese knife.
The surface of the blade has been hammered with a press to give it added character. Hammering also offers practical advantages, acting like dimples to prevent food from sticking when cutting. The blade has also been polished to achieve an elegant mirror effect!
Finally, this Masutani knife has been hand-sharpened by the blacksmith himself, an expert in the field. So your Japanese kitchen knife is ready for use from the first time you use it.
A sturdy oak wood handle
The handle of this handcrafted Japanese knife is made from oak wood, a particularly robust species offering long-term durability. Thanks to its high density, this wood is highly resistant to humidity and will not warp with condensation. What's more, each piece is uniquely grained, lending it a touch of authenticity.
The handle is octagonal to fit the hands of all chefs, whether left- or right-handed. This shape offers an ergonomic grip, guaranteeing comfort of use, even when used for long periods!
Finally, wood paste has been added to fill the small gaps where the blade meets the handle. This makes the whole knife watertight to prevent water infiltration.
To care for your santoku knife, it's important to wash it by hand only, using a sponge and a mild detergent, while avoiding getting the handle wet. After washing, wipe dry immediately and store in a dry place. Do not soak in the sink, and do not use the dishwasher.
