Masutani Japanese knives are handcrafted on Japan's Echizen coast. They are a fine example of Nipponese tradition, as they are the result of prestigious know-how inherited from the blacksmiths of yesteryear who forged the samurai's katanas. In the world of cutlery, Japan's knives are works of art in both authentic and modern styles.
Masutani is a craftsman who works in his own workshop, accompanied by his small team. He makes his knives by hand and packs them in colorful boxes that are perfect for gift-giving!
An efficient and durable VG1 steel blade
This nakiri knife features a typically Japanese San Maï (meaning "3 layers") structure. This technique consists of forging a rigid steel core, then covering it with a softer layer of steel that folds in on itself to protect the core.
The core of this blade is made from VG1 steel, which is enriched with 0.95% carbon. This is the element that increases the hardness of your blade, knowing that a higher hardness will be more durable. As a result, this blade achieves a hardness of 59HRC on the Rockwell scale: a high-performance edge that's easy to maintain, even with spaced-out sharpening sessions.
Next, the core of the blade is coated with a layer of stainless steel that forms the 2 remaining layers. They balance the hardness of the rigid core, while protecting it.
Your handcrafted knife also undergoes a tempering process: it is passed through a salt furnace at a temperature of 800°C to be heated, then cooled by hanging in front of a fan. This process greatly improves the strength of your nakiri knife.
The surface of this blade has been hammered with a press to give your knife character. Hammering is also practical, as it acts like a honeycomb to prevent food from sticking to the walls when cutting. This blade has also been polished for an elegant mirror-effect finish!
Finally, this Masutani knife has been hand-sharpened by its expert blacksmith. So your kitchen knife is ready to use right from the start.
Solid oak handle
The handle of this Japanese knife is made of oak wood, a very robust species that is durable over the long term. The wood's high density makes it resistant to humidity and prevents it from warping with condensation. It is a natural material with a grain that is unique to each piece!
The handle is octagonal in shape to suit the hands of all cooks: left- and right-handed alike! It offers an ergonomic grip for comfortable use, especially during prolonged use.
To care for your carbon-enriched knife, wash only by hand with a sponge and mild detergent, avoiding wetting the handle. Once washed, wipe dry immediately to keep it in a dry place. Do not soak in the sink, and do not use the dishwasher.
