Michel Bras is a seasoned chef with three Michelin stars, thanks to his restaurant in Laguiole. His popularity extends as far as Japan, where he runs another prestigious restaurant. The collaboration between Michel Bras and Kai was therefore a natural one. Michel Bras wanted to offer durable, high-performance kitchen knives, each with its own specific use, for professionals and private individuals alike.
Michel Bras Kai knives are a good compromise between efficiency, durability and aesthetics. The knives were designed with simplicity in mind, as the chef wanted to offer knives just the way he likes them. In other words, they're easy to sharpen, neither too light nor too heavy, and made with beautiful materials and finishes. He advocates knives so easy to handle that they become an extension of the hand, for maximum efficiency. Michel Bras combines his expertise in gastronomy with the exceptional quality of Kai's world-renowned Japanese knives.
This table knife, whose blade shape is similar to that of the famous Laguiole knife, is designed for the table. In particular, it enables you to slice your cuts of meat effortlessly.
The 10.7cm blade is made of VG10 steel, a stainless steel considered one of the best in the world. Thanks to its high corrosion resistance and chromium content of over 13%, it is considered a member of the stainless steel family. This alloy is also used for its ability to give knives a razor-sharp edge, thanks to its high carbon content. Its precise composition is as follows: carbon ensures a good level of hardness for a high-quality cutting edge, followed by chromium for corrosion resistance and molybdenum, which increases the blade's hardness and strength in the face of impact and corrosion. Finally, vanadium and manganese also enhance wear and abrasion resistance.
The blade has a hardness rating of 63 HRC Rockwell. The 3 layers of steel that make up the blade ensure a razor-sharp edge for a long time to come. You can restore its effectiveness by maintaining it with a whetstone whenever you feel it's necessary. Be careful, however, not to use the knife on very hard foods such as bones, to avoid weakening the blade.
A titanium coating protects the steel and provides anti-slip properties for easier cutting.
Finally, you can make out the brand name that has been affixed to the cutting surface, as well as the words "Made in Japan", a guarantee of the utensil's quality. The logo representing the cistre leaf (a plant growing on the Aubrac plateaus) adds a touch of elegance and authenticity, and is the emblem of the chef's "creative" cuisine.
The handle is made from composite wood, a material that gives it a grained appearance and high resistance to humidity and impact. Its weight has been designed to be neither too light nor too heavy, maximizing comfort of use for better cutting results.
Michel Bras has given the handle a "chestnut" shape, taken from Japanese tradition to create an ergonomic handle that fits the shape of your hand without tiring it, despite repeated use. It makes the knife so easy to handle that it becomes an extension of your hand.
The handle also features a stainless steel bolster and base. They reinforce the handle's solidity. The base is engraved with the name of its designer as a signature.
The knife is delivered in a wooden scabbard, in a beautiful jewel-like case. This accessory is indispensable for protecting and caring for your knife.
Knife care :
Clean the knife by hand, never in the dishwasher. Wipe with a dry cloth immediately afterwards, without soaking in the sink. Finally, you can store it carefully on your magnet bar or in your block.
