The Kanetsugu Rev 21 range of knives offers a number of very practical models for your everyday cutting needs, at very attractive prices. It's a great way to test Japanese expertise without breaking your budget.
This 18cm chef's knife is the ultimate all-purpose knife. It's a kitchen essential, enabling you to cut, chop, chisel, mince... It can also be used to cut delicate foods such as tomatoes, thanks to its serrated blade that can more easily penetrate the hard skin.
Blade :
The blade is made of steel enriched with molybdenum, an element that enhances the alloy's hardness and elasticity, making it less brittle. Molybdenum also enhances corrosion resistance. It is therefore a central element of the alloy.
The blade's micro-toothing extends its cutting edge 5 times longer than a standard blade. If you need to sharpen the blade, do so only on the smooth side.
You can distinguish the Japanese characters linked to the brand on the blade, for even greater authenticity.
Handle:
The handle is made of reinforced laminated wood in black. This lightweight material is easy to care for, and ensures pleasant use, whether you're left- or right-handed. The handle is completed by two stainless steel rivets, which join the laminated wood to the half-silk blade.
The knife should be washed by hand, then dried before storage. It is supplied in a plastic cardboard box.
