The Kanetsugu Rev 21 knife range offers a number of practical knives for everyday cutting at very attractive prices. They're a great option for testing Japanese expertise without breaking the bank.

This 13.5cmsantoku knife is a versatile, handy model with a typically Japanese shape. It's ideal for slicing medium-sized fruit and vegetables, for example, or for mincing boneless meat. It can also be used to cut delicate foods such as tomatoes, thanks to its serrated blade which can more easily penetrate the hard skin. Its slightly curved blade is also ideal for chopping herbs.

The blade is made of steel enriched with molybdenum, an element that increases the alloy's hardness while also improving its elasticity, making it less brittle in use. Molybdenum also enhances corrosion resistance. It is therefore a central element of the alloy.

The blade's micro-toothing extends its cutting edge 5 times longer than a standard blade. If you need to sharpen it, do so only on the smooth side of the cutting edge. You can distinguish the Japanese characters associated with the brand on the blade, for even greater authenticity.

The handle is made of reinforced laminated wood in black. This lightweight material is easy to care for, ensuring pleasant use for both left- and right-handed users. The handle is completed by two stainless steel rivets, which join the laminated wood to the half-silk blade, ensuring that the parts are held together perfectly.

The knife should be washed by hand, then dried before storage. It comes in a plastic cardboard box.
