Masterful precision inspired by Swedish forests
Discover the Ryda ST650 santoku knife, a top-of-the-range knife designed in Sweden to provide smooth, precise and comfortable cutting every day. Part of the ST650 range, this model is the fruit of 6 years of development, with a clear objective: to offer a knife that's as efficient as it is pleasant to use.
Inspired by Nordic landscapes, this range combines clean lines and carefully selected materials. This Ryda Knives damascus knife is aimed at enthusiasts looking for a versatile tool for consistent slicing, chopping and mincing. Every element has been designed to ensure a natural grip and consistent efficiency.
A honeycombed damascus blade for clean cuts
The 18cm honeycomb blade features a damascened structure composed of 73 layers of steel. It is built around a core of ST650 powdered steel, surrounded by 36 layers of 316 and 316L stainless steel on each side, for a total of 72 outer layers. This superimposed assembly, combined with controlled heating, reveals a unique damascus pattern on each knife.
ST650 steel is renowned for its fine grain and precise cutting edge. Its exact composition is kept secret, but it is developed to achieve an optimum balance between cutting performance and stability. The blade is also cryogenically treated, reinforcing the steel's internal structure and increasing its hardness. As a result, it reaches around 63 HRC, helping to maintain an effective cutting edge for longer.
The dimples limit the adherence of food to the blade, which improves comfort and fluidity when cutting, particularly on moist or starchy foods. Theflat grind ensures clean penetration, while the mirror-polished finish enhances the damascus pattern and facilitates maintenance.
An olive wood handle designed for comfort
The handle is made from French olive wood, carefully selected according to its grain. Each piece features a unique grain and is handcrafted for an authentic look.
Olive is a dense wood, appreciated in the kitchen for its natural resistance to humidity and good stability over time. It has a soft, pleasant feel, ideal for prolonged use. Its structure limits the absorption of liquids and contributes to the handle's durability.
Its original curved shape improves grip: the little finger fits naturally into the heel, ensuring excellent stability. This design reduces fatigue and makes repeated cutting safer.
The handle is embellished with two green rings and a gold ring on the bolster, creating an elegant contrast. The stainless steel bolster enhances the overall balance, while the bevelled mosaic base provides a neat finish.
