With over 100 years of experience, Sabatier offers a wide range of kitchen knives to suit every taste.
The Ideal 100% forged carbon series will appeal to all cooks, professional or amateur! 100% French, it will take you to the heart of the Thiers cutlery tradition...
The blade of this Fileting knife is made of high-grade carbon steel, for a sharp, long-lasting edge. In fact, thanks to its carbon content, the knife's edge is finer and stronger, and can be sharpened more effectively. However, care must be taken to avoid any traces of oxidation (see advice at the bottom of the page).
This is a forged blade, meaning that it has been fashioned from a single bar of steel. The steel is shaped using a high heat and a press to give it its final form. This process calls for unique know-how, and ensures that your knives are both accomplished and solid. You can feel the forging when you weigh the knife: it will be denser, fuller and more balanced!
The handle is made of black POM (a solid polymer used in the design of kitchenUtensils ). It provides ideal ergonomics. Its strength is further enhanced by 3 brass rivets.
Last but not least, the knife's sober, classic style will suit all tastes. A straight blade, uncluttered handle, refined colors: Ideal Carbone 100% forged knives will appeal to all cooks. In fact, their design is the original one chosen by the company for the creation of these knives.

"A word of advice on care: once you've washed your knife, wipe it dry immediately for storage, to preserve it over time! Carbon tends to oxidize easily. To avoid this, never put your knife in the dishwasher or soak it in the sink for too long. Grease it after each wash to do its blade good. It should be noted, however, that stains may appear over time, and this is normal. This is the case, for example, with prolonged contact with food and its acidity, or depending on the ambient humidity level..." |
