The Sayuto Desert Damascus 17cmnakiri knife is designed to carve vegetables with precision and speed. This particular shape comes straight from Japan. Note that, despite the height of the blade and its imposing appearance, it should not be used for meat or bones!
The knife is made in Guangdong, Western China. This province has been renowned for decades for its cutlery production and cutting tools. Manufacturers in this area have enjoyed a fine reputation for decades. Each knife is therefore produced to French food industry standards.
The blade of this knife is damascened. The blade core is made of 10Cr15CoMoV stainless steel. This alloy has a high carbon and chromium content. The former serves to increase the steel's rigidity and thus ensure a longer-lasting cutting edge, while the latter is effective in combating corrosion.
This stainless steel is enveloped by several layers of softer (and therefore less rigid) steel. They balance and protect the 10Cr15CoMoV steel. In addition to the technical aspect, the damascus finish gives the knife a beautiful visual character, with the alternating steels visible on both sides of the blade.
On top of the damascus part is a beautiful hammering (the little cells). The hammering adds even more character to the knife, and goes very well with the damascus.
The handle is made from two distinct materials. Buffalo horn is used for the base and bolster. This natural material shows variations in color (some may have small white streaks). That's what makes it unique!
For the central part of the handle, we chose ironwood from the Arizona desert. This wood is both dense and robust (hence the name "ironwood"). Its color is naturally dark, but numerous lighter veins add a touch of contrast. Finally, two bright, light copper edgings separate the two materials.
With its 8 different faces, the handle is shaped like an octagon. This shape is equally suited to right- and left-handed cooks.
Care instructions: wash by hand once you've finished cutting. Dishwashers and soaking in the sink are not recommended. Once you've washed it with a sponge and a mild detergent, wipe it dry and store it in a dry place.
