The Sayuto Desert Damascus 21cm chef knife is perfect for a variety of everyday cuts. This is the model most often used in the kitchen. It ensures impeccable cutting of fruit, vegetables, pieces of meat (boneless or frozen)...You can also use it to chop herbs. In short, it's the perfect partner for your recipes.
It is produced in Western China, in the province most renowned for the production of knives and cutting tools: Guangdong. The region's manufacturers have enjoyed a fine reputation for decades. Each knife is therefore produced to French food industry standards.
This knife features a damascened blade. The heart of the blade is made of 10Cr15CoMoV stainless steel, whose carbon and chromium content makes it both corrosion-resistant and rigid enough to hold its edge for a long time. You save on sharpening sessions. On top of this stainless steel come various layers of softer steel. They balance and protect the core steel. The alternation of steels is visible on the cutting surface (you can see it with the different waves of metal that alternate).
The upper cutting surface is hammered (these are the small dimples visible on both sides of the blade). The hammering adds even more character to the knife, complementing the damascus.
The handle is made from two materials. The black parts, bolster and base, are made from buffalo horn. This natural material shows variations in color (some may have small white streaks). This is perfectly normal.
The central part of the handle is made of ironwood from the Arizona desert. This is a very dense and resistant species (hence the name "ironwood"). Its color is naturally dark, but numerous lighter veins add a touch of contrast.
Finally, two bright, light copper edgings separate the two above-mentioned materials.
The 8-sided handle is octagonal in shape. This makes it suitable for both right-handed and left-handed cooks.
To care for your knife, wash it by hand after use. Dishwashers and soaking in the sink are not recommended. Once you've washed it with a sponge and a mild detergent, wipe it dry and store it in its magnetic case, or in a Bag, drawer or magnetic bar.
