Created according to the principles of German gourmet chef Tim Mälzer and forged by master Japanese blacksmiths, Tim Mälzer's Shun Premier series kitchen knives are a concentrate of savoir-faire.
Shun Premier Tim Mälzer ham knives are made from 32-layer damascus stainless steel, and each blade is hand-hammered during forging(a technique known as Tsuchime) to give it an exceptional edge. What's more, the blades have a hard VG 10 core, giving them a Rockwell hardness index of 61+-1 HRC.
To complete the picture, all the knives in this series are checked by Seki's Japanese master blacksmiths, so the knife in question is perfectly suited to its function.
