Created according to the principles and needs of renowned German chef Tim Mälzer, and forged in Japan by experts in the field, the Shun Premier Tim Mälzer Kai series of kitchen knives combines know-how and tradition!
This 16cmUniversal knife is a hybrid model that can not only cut fruit and vegetables, but also mince meat, given its size (boneless pieces, of course). It's practical and versatile, and quickly comes into its own.
Its blade has a core of VG-MAX steel, one of the finest alloys in the VG series. It is based on the VG10 alloy, to which carbon has been added for rigidity, and chromium for resistance to corrosion. This gives it a hardness index of 61+-1 HRC on the Rockwell scale. This steel also features cobalt, tungsten, molybdenum and vanadium, for a result that's both tough and durable, with a fine grit that can be precisely sharpened for a long-lasting, high-performance edge. This steel is then surrounded by 32 layers of hard and soft steels, the damascus method. These layers protect the steel and balance the ratio between hardness and flexibility of the alloy, keeping the knife rigid but less brittle in use.
The top surface has been hammered by hand during forging(a technique known as Tsuchime) to give it a unique look and enhance its non-stick properties (the hollows and bumps of the hammering act a little like honeycombs). In addition, all the knives in this series are inspected by Seki's Japanese master blacksmiths, ensuring that they are perfectly suited to their purpose.
The walnut handle has been crafted to ensure sturdiness and ergonomics, making every use a pleasure! What's more, it's suitable for both right- and left-handed users, which is a plus! The curved shape sits naturally in the hand, and the engraved steel base adds balance to the knife (and a touch of originality!).
Last but not least, the knife's remarkable styling ensures both authenticity and modernity, between the wooden handle and the impeccably finished blade. It comes in a light-colored wooden box, making it an ideal gift (or treat yourself).
Wash by hand and dry after washing to keep it dry and moisture-free. Do not use the dishwasher to wash it.
