Yaxell Japanese kitchen knives are winning over more and more internationally renowned chefs. Indeed, these knives go beyond Japan's borders to offer kitchen brigades the world over exceptionally easy and enjoyable use.
Manufactured in Seki, Japan, since the 1930s, they are the descendants of the famous katana, and their cutting edge is designed to be as sharp as possible. So, whether you're a professional chef or a passionate amateur, you'll be delighted to discover the Japanese brand's knives.
The SUPER GOU series is magnificent: its cutting performance is matched only by its breathtaking aesthetics. This unprecedented range of Japanese knives will enable you to work to perfection with all types of food, respecting their taste to the full.
This 18cm slicing knife is a work of art. Here are the main features that make it an unforgettable piece:
Its blade has an SG2 steel core: this is a special steel powder with a fine, high-density structure that enables it to incorporate more different particles into its alloy. This gives it extreme hardness, which enhances its cutting qualities (the wire is finer). It is also more resistant to rust than VG10, which is already very robust.
The special core is surrounded by 160 superimposed layers of hard and soft steel (80 on each side). Thanks to this assembly of layers, the knife blade offers the perfect combination of hardness and flexibility, and reaches 63 HRC on the Rockwell scale, which is very rare on the cutlery market. Japanese knives have an average HRC of 61. This knife will keep its sharp edge longer.
In addition to this already exceptional steel combination, the knife's edge has been sharpened to an angle of 30° (i.e. 15° on each side), whereas the basic angle of a Japanese knife is 34°. Needless to say, just how sharp it will be!
Its engraving is entirely hand-crafted by a master cutler. He uses a punch to shape the characters, which he then integrates with a light tap of his hammer. His highly-developed skill enables him to add an extra touch of authenticity to the knife.
The handle of this knife contributes to its overall harmony. Made from canvas micarta, it is extremely durable. Quite simply, you'll be able to use it for years without it moving a millimeter.
Composed of 40% resin and 60% linen, this composite material is extremely durable and resistant to temperature variations. It can withstand heat of up to 150°C! It is also highly resistant to moisture. Because of this capacity, micarta cannot shrink, preventing any gaps from forming between the blade and micarta. What's more, this special material has been approved by the American FDA (Food and Drug Administration) for use in professional kitchens.
The 3 rivets that complete it add to its already high strength.
It's important to note that to maintain its beauty, you can wash it gently by hand and wipe it dry immediately afterwards.
Last but not least, we can't fail to mention its unique style. Indeed, its damascus is of unparalleled finesse, and the shine of the polished blade will add elegance to the entire piece. The hand engraving is delicate, and the handle, with its various shades of black and red, is the perfect finishing touch to this knife's accomplished style. The stainless steel base, topped with the brand's logo, adds that extra touch of authenticity that will appeal to all chefs.
