This paring knife has a 10cm blade that's ideal for slicing, finely chopping and peeling small fruits and vegetables. Easy to handle, the blade of this knife can be easily inserted into food. This is a knife with a sharp, durable edge that cuts food without damaging or tearing its fibers.
The knife blade has a core of SG2 steel, a special powdered steel with a fine, high-density structure. This enables it to integrate a greater number of mixed particles into its alloy.
This structure gives the core a very high level of hardness, which enhances its cutting performance: the harder the edge, the sharper the cutting action. By way of comparison, it is even more resistant to humidity than the already high-performance VG10 steel.
This SG2 core is then protected by 160 alternating layers of hard and soft steel (80 on each side of the core). This assembly of layers gives the blade the ideal combination of light suppleness and hardness, reaching 63 HRC. The blade stays sharp longer.
The cutting edge of the blade has been designed with a total angle of 30° (15° on each side) when the standard angle of a Japanese knife is around 34°. A high-performance cutting edge!
Last but not least, the engraving on the blade is done entirely by hand by a master cutler, using a punch which he places in such a way as to form the Japanese characters. He then taps with a small hammer. His expertise adds a touch ofauthenticity to the knife.
The Damascus paring knife has a red and black canvas micarta handle. Micarta is composed of 60% linen and 40% resin, making this composite highly durable and resistant to temperature differences. In fact, it can withstand heat up to +150°C!
Micarta is also highly resistant to humidity, which means it won't shrink orform gaps between handle and blade.
This composite material has also been approved by the FDA, the US Food and Drug Administration. This makes micarta suitable for professional use. The handle is complemented by three rivets that secure it to the knife for added strength.
The knife should be cleaned gently by hand, as it is not dishwasher-safe. It should also be dried immediately to protect it.
