The razor-sharp edge of this knife will win you over from the very first use. Made from VG5 steel, the core of the blade is enriched with carbon(0.7% - 0.8%), giving it good hardness. This hardness offers both incomparable cutting quality and less frequent sharpening. In fact, the edge of the blade wears much less quickly than a low-hardness blade. VG5 is very similar to VG10, but is slightly more resistant to corrosion. Rockwell hardness is set at 59 HRC, requiring gentle sharpening with a 3000/8000 grit Sharpening stone, preferably double-sided. This solid core is covered with a softer steel to balance hardness and flexibility.
Hammering the blade is both aesthetic and practical! The little hollows act as cavities: as you cut your piece of meat or tomato, you'll notice that the food won't stick to the blade, making your work faster and cutting more enjoyable.
The knife handle is made of micarta. This material is a blend of resin and paper, which is extremely strong and anti-bacterial.
