Description

Opt for the perfection of Japanese craftsmanship with this Tamahagane Tsubame chef's knife!

Japanese craftsmanship is beautifully showcased in this Tsubame range. Tamahagane is the Japanese steel used by craftsmen to make Japanese swords. The reputation of the sharpness of Japanese swords is well known, and speaks volumes for the quality of Tamahagane brand blades.

The blade of this chef's knife measures 24cm: this long, wide blade enables you to work on large pieces of vegetables such as cabbage, pieces of meat, but also has the capacity to slice small onions and herbs. Its versatility is a real asset: every cook needs a chef's knife!

The razor-sharp edge of this knife will win you over from the very first use. Made from VG5 steel, the core of the blade is enriched with carbon(0.7% - 0.8%), giving it good hardness. This hardness offers both incomparable cutting quality and less frequent sharpening. In fact, the edge of the blade wears much less quickly than a low-hardness blade. VG5 is very similar to VG10, but is slightly more resistant to corrosion. Rockwell hardness is set at 59 HRC, requiring gentle sharpening with a 3000/8000 grit Sharpening stone, preferably double-sided. This solid core is covered with a softer steel to balance hardness and flexibility.

Hammering the blade is both aesthetic and practical! The little hollows act as cavities: as you cut your piece of meat or tomato, you'll notice that the food won't stick to the blade, making your work faster and cutting more enjoyable.

The knife handle is made of micarta. This material is a blend of resin and paper, which is extremely strong and anti-bacterial. Each handle has a different graying veining: buying a Tamahagane knife is a guarantee of owning a unique knife! The knife can be quickly cleaned by hand with a sponge, then wiped with a soft cloth.

This chef's knife has undeniable qualities that cooks have come to expect! Professionals, Japanese knife aficionados and novice enthusiasts alike will be seduced. Display your Tamahagane Tsubame knives on a magnetic bar to give your guests a real show-stopper!
