Tamahagane Bamboo Kyoto Japanese knives have some very attractive features! In Japan, swords are made from a traditional steel called Tamahagane, which says a lot about the sharpness of the brand's knives!

The blade of this Bamboo kyotoUniversal knife measures 15cm, making it the ideal compromise between a chef's knife and a paring knife. Like its two acolytes, the Universal knife will enable you to make a variety of cuts on fruit, vegetables, fish and meat.

The sharpness of this knife is enhanced by the steel used in its blades. To date, Tamahagane is the only Japanese cutlery company to use VG5 steel. This steel has unique qualities, such as a relatively high resistance to corrosion, but it also has qualities very similar to those of VG10 steel. These steels are reputed to be extremely hard and strong, offering a very pleasant cutting edge. VG5 has a carbon content of between 0.7% and 0.8%, making it even more robust. This VG5 steel core is wrapped in a softer steel to give the blade a little flexibility. This softer steel forms 63 layers of damascus, and it's thanks to this process that we get this kind of iridescent blade that's so aesthetically pleasing. You'll not only be faster in the kitchen, but also enjoy cooking dinner.

These properties give the blade an HRC hardness of 59 on the Rockwell scale. This hardness makes sharpening long-lasting, so you won't have to rework the edge too regularly. Their service life is also greatly extended, so you'll be making a long-term investment with this kind of knife.

The knife handle is made of stainless steel, making it highly resistant to corrosion. Maintenance is quick and easy, thanks to a simple wipe down with a sponge. Stainless steel is highly hygienic, absorbing no bacteria! The design of the handle is original and strongly reminiscent of the origins of this Japanese knife.
