This 27cm yanagiba knife is ideal for cutting delicate foods such as fish or meat. Its large blade allows you to feel at ease when cutting very large pieces.
Shimomura TU-9000 knives are made in Japan by the cutlery company of the same name. Founded in 1874, the company specialized in the manufacture of agricultural tools, and in 1957 was among the first to enter the field of stainless steel knives. The company uses its know-how and high-precision technology to create knives for both private and professional customers.
The blade is made of stainless steel enriched with vanadium and molybdenum. Vanadium enhances strength and impact resistance, while molybdenum promotes strength and corrosion resistance. The result is an HRC hardness of 56/58 on the Rockwell scale, giving the blade a good cutting edge that's easy to sharpen when required.
To guarantee optimum use from the very first cut, the blade has been sharpened with a Sharpening stone by a qualified craftsman.
The handle is made of laminated wood, an easy-care, lightweight material. The knife's grip and ergonomics are perfect! It can be used with either the left or right hand. The handle is completed with 2 retaining rivets and a stainless steel bolster that links it to the blade and adds balance to the knife. The black color brings sobriety and elegance to the knife.
We recommend washing the knife by hand under running water with a neutral soap, then wiping it with a soft cloth before storing it in a dry place. It is preferable not to apply too much pressure to the handle under water, as this could cause the wood to warp. Careful maintenance will keep your knife looking as good as new.
This yanagiba knife is presented in an attractive gilded cardboard box: an ideal gift!
