Japan Kanetsune knives are designed and manufactured in Seki, a city renowned in Japan for its ancestral knife production. The know-how accumulated by the manufacturer has resulted in knives that are efficient, ergonomic and stylish, suitable for all cooks. The materials used are of the highest quality, as are the manufacturing processes employed in the creation of these knives.
This santoku knife is highly appreciated for its versatility. It's like a Japanese chef's knife, enabling you to slice, chop or mince various types of food. Slightly curved, it creates a natural rocking motion that facilitates cutting.
Its 18cm blade is manufactured according to the San Mai pattern, a simplified 3-layer damascus:
- The core is made of Sandvik 19C27 steel, a top-of-the-range Swedish steel much appreciated in cutlery. It has a chromium content of 13.5% and a carbon content of 0.5%. Here, the knife achieves a hardness of 58 HRC, which means it has a very good edge-holding capacity, and its cutting capabilities are also very good. What's more, this alloy is stainless, so corrosion resistance is high. Sandvik steel (often used for professional knives) means that sharpening sessions can be spaced out during normal use.
- The top layer is made of 410 stainless steel, and protects the core by folding over it on each side (hence the 3 layers). The waves of this simplified damascus are visible on the bottom of the blade, for an unprecedented effect.
The stainless steel bolster links the blade to the handle. The handle is made of pakkawood, a composite material composed of strips of wood and resin, all hot-pressed together. This resistant material holds up well to temperature changes and humidity. So it's ideal for use in the kitchen! The handle is completed by 3 stainless steel rivets, which enclose the full-flat silk blade inside the handle.
Japan Kanetsune kitchen knives are a timeless, elegant and high-performance choice for professionals and amateur enthusiasts alike!
