Blade details :
The blade has a core of AUS10 steel, a Japanese steel renowned for its strength. In fact, it's the strongest of the AUS family! It contains a high carbon content (1.05%), giving it a rigid cutting edge for long-lasting durability. The final Rockwell hardness is 60 HRC, offering an advantageous ratio between wire durability and ease of maintenance. The latter is easily carried out with a Sharpening stone for impeccable results.
The alloy used is also enriched with nickel, manganese, vanadium and silicon. These elements balance the hardness of the carbon, making the blade less brittle in use. All in all, this alloy is full of qualities: it resists corrosion and wear in general.
Around this quality core are superimposed layers of steel. These layers, enriched with nickel, create an attractive color contrast between the different layers, making them easy to distinguish on the blade. The alternating layers once again counterbalance the hardness of the core and add suppleness to the blade (without making it "flexible", we mean).
The damascus on the blade adds originality to the knife. Although damascus plays a technical role, it also gives the knife a very aesthetic look! Here, it's a damascus with a lot of character. Indeed, it is circular in shape, as if a drop had fallen onto the blade before spreading out to form small waves in the water.
Finally, this blade comes with the brand's logo engraved on the cutting surface, guaranteeing its authenticity.
Handle details :
The handle is made of oak, a wood that is resistant to moisture, shock and vibration, and will not warp easily. It's a species much appreciated in cutlery and the kitchen world in general.
The handle is finished in a light black lacquer that darkens the natural oak color for added character. The handle is octagonal in shape. These 8 faces are suitable for all cooks, for ambidextrous use.
For ease of handling, even over time, the handle remains lightweight.
Finally, wood filler has been injected at the junction between the blade and the handle to prevent food and possible liquids from entering.
Knife care:
Wash by hand (no dishwasher) and wipe with a soft cloth immediately afterwards for complete care. This will help to preserve the knife over the long term, since even though it is considered stainless, this knife contains carbon, which is oxidizable. Also, as the handle is made of wood, we recommend not getting it too wet.
