The Wusaki Unagi 24cm chef knife is the essential knife to have in your kitchen. It's useful for all your everyday cutting: you won't be able to get rid of it! It's the most widely used knife in the kitchen, and for good reason: its versatility makes it a great asset for meat, fish, vegetables... It's so efficient, you'll be able to cut effortlessly.
Wusaki Unagi knives are manufactured by the Japanese cutlery company Tsunehisa, which brings together a small team of highly skilled experts. Their know-how is reflected in the finishes and choice of materials.
Blade :
The blade has a core of AUS10 steel, a Japanese alloy considered the strongest of the AUS family. This steel is enriched with 1.05% carbon, giving it a rigid cutting edge for long-lasting sharpness. Its final hardness of 60 HRC combines durability with ease of maintenance. Sharpening is done with a Sharpening stone for impeccable results.
The steel is enriched with nickel, manganese, vanadium and silicon, balancing the hardness of the carbon so that it is not too brittle in use. In addition, this alloy is renowned for its anti-corrosive and wear-resistance properties: you could say it's a steel full of qualities!
Finally, this core is surrounded by several superimposed layers of steel. These layers, enriched with nickel, create a contrast of colors that allows them to be distinguished on the blade. Once again, this alternation of layers counterbalances the hardness of the core with the suppleness of the blade. It should be noted that the term "suppleness" refers to the steel's ability to withstand impact better, and not to its pure flexibility.
Although damascus plays a technical role, it also has a real aesthetic appeal! Adding character and originality to the knife, Wusaki Unagi knives feature a unique damascus pattern not often seen. Indeed, it is circular in shape, as if a drop of water had fallen on the blade and propagated, forming small waves in the water.
Finally, the brand logo is inscribed on the cutting surface: authenticity guaranteed.
Handle:
The handle is made from oak wood, a durable species appreciated in cutlery. This wood is highly resistant to humidity, shock and change.
The 8-sided octagonal shape is suitable for all cooks, right- and left-handed alike! It's lightweight and easy to handle, for comfortable use even over long periods.
The handle is lightly lacquered in black, darkening the natural shade of the oak to give it even more character!
Finally, a binder has been injected at the junction between the blade and the handle to fill the gap between these two elements, preventing waste and liquids from entering.
How to care for your knife :
Wash the knife by hand (dishwashers are forbidden) and wipe it with a soft cloth immediately afterwards for complete care, which will help to preserve it over the long term.Even though it is considered stainless, this knife contains carbon, which is oxidizable. What's more, as the handle is made of wood, we recommend keeping it as dry as possible.
