Description

The Takeshi Saji san VG10 Gold chef knife is a perfectly versatile knife. Use it for all your cuts: fruit, vegetables, meat, fish, herbs... Its rounded blade allows you to use a rocking motion to effortlessly slice your food.

Blade :

It's called damascus because it's built from several interlocking layers of steel and a rigid core at its center. The soft steel enveloping the rigid core softens it while providing resistance to breakage.

This core is made of VG10 steel, a Japanese steel renowned for its high cutting efficiency and excellent durability. With a carbon content of 1%, it achieves an HRC hardness of approximately 60 on the Rockwell scale. A core such as this ensures a long-lasting, sharp edge, thus reducing the number of sharpening sessions. What's more, this steel can withstand a razor finish!

Several layers of steel then cover the VG10 core to form the damascus. These layers are visible on both sides and form waves across the entire cutting surface. Despite its technical advantages, damascus has a real aesthetic appeal, as it forms a very attractive pattern on the blade! What's more, the damascus on these knives is truly unique, distinguished by its beautiful, slightly coppery color.

The handle :

The handle is made of rosewood, an exotic species known for its strength and resistance to humidity. Rosewood has beautiful shades of brown, guaranteeing a unique look on every knife.

Between the blade and the handle is a pakkawood bolster. Pakkawood is a composite material made from compressed wood and resin, and is perfectly resistant to humidity and temperature variations. The white bolster contrasts nicely with the darker handle and blade.

The octagonal handle is perfectly suited to ambidextrous use!

Finally, wood putty fills the space between the blade and handle, making the whole perfectly watertight and hygienic.

How do I care for my knife?

The knife should not be put in the dishwasher. It should be washed by hand in lukewarm water, using a sponge and a mild detergent. Once washed, wipe with a soft cloth to remove all traces of moisture, then store.
