Takeshi Saji VG10 Gold Japanese knives are entirely handcrafted. Expert blacksmith Takeshi Saji san is highly regarded in the cutlery industry. The knives he forges are appreciated for their finesse and elegance. He brilliantly combines ancestral forging techniques with innovative designs that appeal to a wide range of consumers.
Certified a "traditional master craftsman" in the 90s, his workshop is located in the famous TakefuKnife Village, one of Japan's leading knife-making centers. It is home to a large number of highly skilled blacksmiths who work in the traditional way to preserve ancestral know-how. The new generation continues to be trained, and being brought together in the same place enables them to share their tricks of the trade.
The Takeshi Saji VG10 Gold 13.5cmUniversal knife is a small, handy model used for cutting medium-sized fruit and vegetables, and for mincing or trimming small pieces of meat (without bone). Its small size makes it pleasant to use, while remaining highly versatile.
Zoom on the blade :
The blade is damascened, i.e. constructed from several interlocking layers of steel. In the center is a rigid core, followed by several layers of softer steel that soften the core and make it more resistant to breakage.
The core of the blade is made of VG10 steel, a Japanese alloy renowned for its durability. Composed of 1% carbon, it reaches a hardness of 60 on the Rockwell scale, making it rigid and enabling it to be sharpened to a razor-sharp edge. The VG10 also has the particularity of keeping a good edge for a long time: sharpening sessions can therefore be spaced out!
This core is then covered with several layers of steel, visible on both sides of the blade as it forms small waves along the cutting surface. In addition to its technical advantages, damascus creates beautiful, unique patterns on every knife. What's more, the damascus on these knives is unique in that it is slightly coppery in color.
The handle in detail:
The handle is made of rosewood, an exotic species known for its resistance to shock and humidity. Rosewood has brown nuances with attractive dark veins, which will be unique on each handle.
It is complemented by a bolster in white pakkawood, a composite material made from resin and compressed wood that resists the effects of humidity and temperature variations. Its light color contrasts with the knife's dark handle and blade.
Octagonal in shape, it is suitable for all cooks and ambidextrous in use.
Wood pulp fills the space between blade and handle. This makes it watertight and prevents small scraps from getting inside.
Knife care :
The knife should not be put in the dishwasher. It should be washed by hand under lukewarm water, using a sponge and a mild detergent. After washing, wipe with a soft cloth to remove all traces of moisture, then store.
Please note that quantities are limited, due to the provenance of the knives and the capacity of the blacksmith, who performs all operations by hand.
Perfect as a gift, it comes in an attractive wooden box.
