Description

A handcrafted Japanese damask nakiri that enhances your cuts

Discover the Makoto Kurosaki VG7 Damascus hammered nakiri knife, a precision knife forged in the heart of Japan's Takefu Knife Village by a passionate artisan cutler! Designed to transform the cutting of vegetables into a fluid, controlled gesture, this kitchen knife combines traditional know-how with contemporary performance. Its damascened blade offers a rare balance between cutting finesse, sturdiness and visual beauty, making the knife an exceptional choice for anyone looking for an exceptional handcrafted Japanese damascened knife!

A high-performance damascened blade

The blade of this Makoto Kurosaki nakiri knife measures 16.5cm, an ideal length for slicing vegetables, herbs and roots with ease. Its core is forged from Japanese VG7 steel with around 1% carbon, guaranteeing a long-lasting edge and excellent cutting capacity. This steel is appreciated for its balance between corrosion resistance and high hardness, close to 61 HRC on the Rockwell scale. Such hardness enables a sharp edge to last longer, while offering good resilience to sharpening.

The VG7 core is then surrounded by several layers of softer stainless steel, forming a damask structure. These top layers play a dual role: they protect the hard core from impact and corrosion, while offering flexibility to counterbalance its rigidity. This technique gives rise to a unique damask pattern, the result of alternating welded and polished layers.

In addition to its aesthetic appeal, damascus is also a guarantee of performance: it reinforces the blade's mechanical strength and limits friction when cutting. The hammering on the upper part of the blade is done by hand using the Tsuchime technique, and completes the design. By creating small cavities, like a punch, it helps to reduce the adherence of food, particularly water-rich vegetables such as zucchinis or potatoes.

Last but not least, the blade's satin finish and flat cutting edge ensure clean, even penetration with every cut.

A noble, ergonomic handle for absolute comfort

The handle of this Japanese knife is made of walnut, a noble wood that combines durability, pleasant texture and warm aesthetics.

The octagonal shape of the handle ensures a secure, comfortable grip, suitable for both right- and left-handed users, as well as for all types of cutting. This studied geometry provides a stable hold, reducing fatigue during prolonged use.

The rigid, contrasting ebony bolster provides additional balance while reinforcing the knife's overall structure. Like walnut, ebony is a noble wood. Together, the walnut handle and ebony bolster give the knife an elegant look, perfectly in keeping with the Japanese cutlery tradition.

Use and care

To preserve the quality of your handcrafted Japanese damask knife, wash it only by hand after each use, with a soft sponge and a non-abrasive detergent, then wipe dry immediately. Do not soak in the sink or dishwasher, as this may damage the steel and wood. Store your nakiri on a knife block, a magnetic bar or in its box to protect it. Sharpening with an appropriate stone will maintain the blade's exceptional cutting edge.

Master knife-maker Makoto Kurosaki

Makoto Kurosaki is a Japanese blacksmith from an exceptional lineage: he is the elder brother of Yu Kurosaki, one of Japan's most renowned contemporary cutlers. Like his younger brother, he is based at the Takefu Knife Village in Echizen, and trained alongside master knifemaker Yoshimi Kato, heir to the traditional skills of Japanese forging. This long apprenticeship with such a respected craftsman enabled him to acquire the advanced forging techniques he now applies with rigor.

Today, Makoto produces his own knives under his own name, in small series, with extreme care taken over every detail: choice of steels, mastered heat treatments, hand-hammered finish, handle adjustment... Every detail is thought out to combine aesthetics, performance and durability, respecting tradition while integrating personal touches. Makoto Kurosaki embodies a new generation of craftsmen: he perpetuates his family heritage while asserting his own stylistic identity.
