Yoshihiro offers high-performance Japanese kitchen knives, designed to accompany you for many years. Established for over a century in Japan, the brand's craftsmen are descendants of skilled blacksmiths, who made warriors' swords as early as the 14ᵉ century. The techniques passed down from generation to generation to design katanas have been incorporated into cutlery, giving Japanese knives exceptional sharpness.
Each knife created by the brand is unique, guaranteeing unrivalled prestige. Yoshihiro's motto, 一期一会, translates as "every moment is a once-in-a-lifetime opportunity".
The Universal knife is a versatile model that lets you vary your cuts! It allows you to perform small precision jobs such as preparing fruit and vegetables, or to cut small pieces of meat. Be careful not to use it on hard foods such as bones or squash.
This Japanese kitchen knife features a superb damascened blade. Its core is made of ZA-18 Japanese steel, a stainless alloy created by Aichi Steel. Its composition is similar to that of VG10 steel, which is very popular in the kitchen, with a higher carbon content of 1.2%. Thanks to this, its hardness is 61HRC on the Rockwell scale: your blade has excellent edge retention with a high-performance cutting edge.
The alloy also has a high chromium content, which strengthens your blade against corrosion. However, this blade still requires careful maintenance to prevent oxidation.
Next, the core of your blade is coated with several layers of softer steel to add better protection and give it optimum balance. As a result, your blade becomes less brittle with use! This superimposition of different layers creates the damascus pattern. The patterns are unique to each blade, and damascus gives character to your handcrafted Japanese knife.
The handle of your damascus knife is made of oak, a durable and sturdy wood. Its high density makes it resistant to condensation, shock and vibration. The handle has been burnt at the end to further increase its strength, but also to contrast perfectly with the warm tones of the oak.
The handle is octagonal in shape to suit all cooks, whether left- or right-handed. It offers an optimal, comfortable grip, practical for prolonged use.
To care for your handcrafted Japanese knife, wash it exclusively by hand with a sponge and mild detergent, avoiding wetting the handle. Wipe dry immediately after washing and store in a dry place. Do not put in the dishwasher or leave to soak in the sink.
