A San Mai blade made of Aogami Super steel
The 13-cm blade features a San Mai construction, consisting of a hard steel core surrounded by two outer layers of softer stainless steel. This design concentrates the blade’s cutting qualities in the core, while limiting the blade’s exposure to impact and corrosion along the sides.
The core of the blade is made of Japanese Aogami Super steel, a so-called carbon steel containing approximately 1.5% carbon. Such a high carbon content results in a fine, exceptionally durable edge. Its hardness of 65 HRC promotes excellent edge retention, along with the ability to be sharpened precisely on a whetstone. However, this steel requires regular care, as the core can oxidize if left damp.
The blade features a flat grind that provides a consistent geometry suited for everyday cutting tasks. The Kokusen line, which translates to “black brilliance, ” combines a blade with a slightly dark sheen with a delicate hammered finish reminiscent of fireworks. This aesthetic highlights the contrast between the Aogami Super steel and the stainless steel layers.
A natural handle with elegant contrasts
The handle is made of rosewood, a natural material whose shades and grain vary from piece to piece. This characteristic gives each knife a unique appearance. The wood also provides a pleasant feel and a warm sensation in the hand.
The black pakkawood bolster creates a subtle transition between the blade and the handle. This composite material, made from wood and resin, offers good stability against changes in humidity. Its appearance may vary slightly from one knife to another.

How to care for your artisanal utility knife?
Wash the blade by hand with a soft sponge, then dry it immediately with a clean cloth. Since the Aogami Super core is sensitive to moisture, avoid soaking it and never let the knife air-dry. Do not put it in the dishwasher.
Use a wooden or soft-surface cutting board, and avoid cutting bones, frozen foods, or very hard items. To maintain the 65 HRC edge, use a sharpening stone suitable for highly hardened steels. A thin layer of food-grade oil may be applied before prolonged storage.
The Expertise of Yu Kurosaki
Yu Kurosaki is a Japanese blacksmith based in Echizen, in Fukui Prefecture. He began his apprenticeship as a blacksmith in 2002 before establishing his own workshop in 2014, in the heart of the famous Takefu Knife Village, a region of Japan renowned for its blacksmithing tradition.
His knives are produced in small batches and combine traditional techniques with contemporary finishes. Yu Kurosaki works with several types of Japanese steel, including Aogami Super, VG10, and SG2. His blades are prized for their hammered patterns, unique designs, and handcrafted construction.
