Shizu Hamono Japanese kitchen knives have been made for half a century in the town of Seki, Japan.
The manufacturer opened its doors in 1959, and perfectly combines Japanese traditions with new technologies to create its knives. The knives meet the highest standards, and provide lasting support in the kitchen. Shizu Hamono's specialty is blade polishing, a complex process depending on the alloys used.
This expert knifemaker offers you the Shizu Hamono Yamato knife series, aesthetic, high-performance models that will quickly pay for themselves!
This 18cmsantoku knife has a typically Japanese shape and is renowned for its versatility. It has the same functions as a Western chef's knife. You can use it for chopping, mincing or mincing your food (no bones or frozen food, of course).
Blade :
This knife has a 3-layer blade with a structure known as San Mai. This is a simplified damascus pattern, which you can see on the bottom of the blade in the form of a small irregular wave.
The heart of the blade is made of AUS8 Japanese stainless steel, enriched with molybdenum and vanadium, 2 essential elements in an alloy. For example, molybdenum enhances the knife's corrosion resistance, while vanadium increases its impact resistance. AUS8 steel also contains 0.8% carbon and 14.5% chromium. The former has an impact on the knife's hardness (which totals 59 HRC), while the latter is essential for the knife's resistance to oxidation. The result is a high-performance, easy-to-maintain alloy. All this is topped by a layer of SUS1A-1 steel, which increases the knife's resistance to corrosion.
The hammered finish of the blade adds character to the knife. Each cell is unique, for an original look on every knife in the series.
Handle:
The handle is made of dark laminated wood, with unique veins on each model. Its oval shape makes it suitable for both right- and left-handed use, and its polished surface is very pleasant in the hand. The knife remains lightweight, to avoid fatigue when used over time.
The knife is supplied in an elegant, light-colored wooden box. The brand logo is pyrographed on the inside of the lid, for even greater authenticity. You can easily give it to a cooking enthusiast, or just treat yourself!
Care :
We recommend manual care and immediate drying with a soft cloth. Once washed and properly dried, the knife can be stored in its box, away from moisture.
