Expert knifemaker Shizu Hamono offers you the Yuri knife series, featuring aesthetic, high-performance models at very attractive prices.
This 17.5cm nakiri knife knife is typically Japanese in shape. Its wide, rectangular blade is recommended for cutting vegetables, to ensure a clean, precise motion. What's more, you can use its wide cutting surface as a small "scoop", to gently transfer cut food to another container.
Blade:
It features a 3-layer blade with a structure known as San Mai. It's a simplified damascus, which you can see along the cutting surface, thanks to a small wave representing the different steels. The heart of the blade is made of AUS8 Japanese stainless steel, enriched with molybdenum and vanadium, two essential elements in an alloy. For example, molybdenum enhances the knife's corrosion resistance, while vanadium increases its impact resistance.
AUS8 steel also contains 0.8% carbon and 14.5% chromium. The former has an impact on the knife's hardness (which totals 59 HRC), while the latter is essential for the knife's resistance to oxidation. The result is a high-performance, easy-to-maintain alloy. All this is topped by a layer of SUS1A-1 steel, which increases the knife's resistance to corrosion.
Handle:
The handle is made of light-colored laminated wood, with unique veins on each model. Its oval shape makes it suitable for right- and left-handed use, and its polished surface is very pleasant in the hand. The knife remains lightweight, to avoid fatigue over prolonged use.
The knife is supplied in an elegant, light-colored wooden box. The brand logo is pyrographed on the inside of the lid, for even greater authenticity. You can give it as a gift to a chef, or treat yourself!
Care and maintenance :
We recommend hand-cleaning and immediate drying with a soft cloth. Once washed and properly dried, the knife can be stored in its box, away from moisture.
