Zwilling Pro German kitchen knives are perfect for professionals and amateurs alike. Their functionality and efficiency suit everyone! You'll enjoy your cuts for years to come.
This 13cm bagel knife is recommended for precision cutting of your various buns, known for their complicated crust and delicate flesh. The special serration of this knife (with teeth of different sizes) ensures smooth penetration: your food won't be damaged.
Designed in stainless steel, the blade has been enriched with carbon and chromium: the concentration of these two elements further enhances the knife's corrosion resistance and strength.
In fact, its hardness is around 56/58 HRC, so the cutting edge remains sharp, but the steel is easy to maintain, for example with a sharpening gun- a quick and effective solution, even in professional kitchens.
What's more, the blade has been forged using Zwilling 's proprietary SIGMAFORGE process: the blade is formed on a single piece of steel, which avoids welding or sticking points, and increases the knife's strength and balance.
Heat treatment of the blade is based on FRIODUR tempering. This involves placing the steel in ice, directly after heating, to lower its temperature. This further increases the steel's strength and hardness.
This technique also perfects the cutting edge, giving it a slight suppleness that makes it easy to use (this does not mean that the knife is flexible).
Sharpening is carried out in V-Edge Profile (i.e. with a "V" shape), at 15° on each side of the blade. The cutting edge is sharp, and rivals even some Japanese knives!
The slightly curved bolster is soft and pleasant in the hand (a brand innovation, adding a design touch!). The handle, in black synthetic material, features 3 rivets that secure the full tang blade inside. Comfort is optimal, and the knife is suitable for both left- and right-handed users.
Beyond its performance, this range of kitchen knives is also recognizable by its sleek style, developed by Italian-born designer Matteo Thun: a design that is of course at the service of ergonomics, but it undeniably adds cachet to these knives... It's a perfect blend of classic and modern.
To care for your knife, hand-wash it and dry it immediately with a soft cloth, to maintain its appearance and performance over time.
