Every Zwilling Pro kitchen knife combines design, performance and durability. Professional cooks can appreciate its time-saving efficiency, while amateurs can appreciate its ergonomic design. There's something for everyone!
This 14cm chef's knife is a must-have in the kitchen. It's the multi-purpose knife par excellence, capable of chopping, mincing or mincing various foods, such as vegetables, meat, herbs...What's more, its serrated surface is highly original for a chef's knife. It will help you cut delicate foods like tomatoes cleanly.
The blade is made of stainless steel, with a special composition developed by Zwilling. The manufacturer has found the optimum blend of carbon and chromium, to both increase the hardness of the blade's edge, and its resistance to corrosion. These are the two key elements of the alloy.
Its hardness is around 56/58 HRC on the Rockwell scale, so the cutting edge remains developed, but the steel is still easy to maintain, for example with a Sharpening steel. A few passes over it and you're done. In fact, it's the quickest solution in professional kitchens!
What's more, the blade has been forged using Zwilling 's proprietary SIGMAFORGE process: the blade is formed from a single piece of steel, which avoids too many welding points, thus increasing the strength and balance of the kitchen knife.
Heat treatment of the blade is based on the FRIODUR method: the steel is immersed in ice to bring down its temperature almost brutally. The aim is to further increase the steel's strength and hardness, for an impeccable finish. This technique also perfects the cutting edge, giving it a slight suppleness that makes it easy to use.
Sharpening is carried out using the V-Edge profile (i.e. a "V" shape), at 15° on each side of the blade (a total of 30°). The cutting edge is sharp, and rivals even some Japanese knives!
The delicately curved bolster is the perfect link between blade and handle. It is soft and pleasant in the hand (a brand innovation, adding the design touch to the range). The handle is made of black synthetic material, with 3 rivets securing the full tang blade inside. Comfort is optimal for both left- and right-handed users.
Beyond its performance, this series of knives is also notable for its sober style, created by Italian designer Matteo Thun.
The design of these knives is of course at the service of ergonomics, but there's no denying that it adds cachet to each knife! It's a perfect blend of classic and modern: the result never goes out of style.
To care for your knife, hand-wash it and dry it immediately with a soft cloth to maintain its appearance and performance.
