This 20cm slicing knife is ideal for slicing hams and even salmon. Its fine blade ensures a clean result, bringing out the full flavor of your food. Given its length, you can opt for larger pieces.
To achieve the cutting quality of the current Zwilling Pro range, the manufacturer has designed a stainless steel blade that has been enriched with carbon and chromium: this more intense concentration increases the knife's strength and resistance to corrosion. These two components are therefore of prime importance for the knife's long-term durability and efficiency.
In fact, its final hardness is between 56/58 HRC, so the cutting edge remains sharper, but the steel is still easy to maintain, for example with a Sharpening steel. A few passes over it and you're done, without wasting any time.
Zwilling's own SIGMAFORGE process produces a forged blade from a single piece of steel. This avoids the need for too many welding points, thus increasing the knife's strength and balance.
Heat treatment is based on the FRIODUR method (developed by Zwilling): the steel is plunged into ice to bring down its temperature almost brutally (after it has been heated). The aim is to further increase the steel's strength and hardness, for an impeccable finish. This technique also perfects the cutting edge, giving it a slight suppleness that makes it easy to use.
Sharpening is carried out using the V-Edge profile (i.e. a "V" shape), at 15° on each side of the blade (a total of 30°). The cutting edge is sharp, and rivals even some Japanese knives (since the basic angle of a Western knife is generally 35°).
The rounded Bolster, delicately recessed on the sides, perfectly links the two parts of the knife. It is soft and pleasant in the hand (a brand innovation, adding the right design touch).
The handle is made of black synthetic material, with 3 additional rivets securing the full tang blade inside. Comfort is optimal for both left- and right-handed users.
The sleek design of this range was created by Northern Italian designer Matteo Thun. It adds cachet to the range. It's a perfect blend of classic and modern: the result is timeless.
