The 20cm blade is forged from a single piece ofspecial Zwilling stainless steel, using the SIGMAFORGE® process. This process guarantees a blade with a dense, homogeneous structure, perfect balance and great stability. The knife is then FRIODUR®-treated, a cryogenic hardening process that improves hardness (approx. 57 HRC), corrosion resistance and edge durability.
The cutting edge features a V-edge grinding, offering a total sharpening angle of around 30° (15° on each side). The knife ensures a precise, even and long-lasting cut. The saw teeth of the cutting edge are perfectly spaced and sharpened to penetrate the crust effortlessly, preserving the interior of the food.
An ergonomic, secure handle
The bread knife has a 12.4cm handle molded in high-density synthetic material, a material resistant to humidity, shock and temperature variations. Its Western shape with curved heel provides a comfortable, secure grip, while offering natural support for the palm.
Three stainless steel rivets securely fasten the handle plates to the tang, ensuring strength and durability. The stainless steel bolster offers a smooth transition between blade and handle, while protecting fingers during cutting and providing good balance to the whole. This ambidextrous handle is suitable for all cooks.

Maintaining my Zwilling knife to preserve its performance
To preserve all the qualities of your Zwilling Professional "S" forged knife, wash it by hand with a non-abrasive sponge and a mild detergent. Dry immediately after use. Use a wooden or bamboo cutting board to avoid dulling the teeth. Store it on a magnetic bar or in a knife block to protect it from knocks and scratches.
