No prolonged soaking is required. Simply splash a little water onto the surface and begin sharpening. For the very first use, Shapton recommends soaking the stone for five to six minutes to obtain a smoother sharpening feel.
Choose the grit according to the condition of your blade. Coarse grits such as 120 or 320 are designed to repair chips and reshape heavily worn edges. Medium grits around 1000 to 2000 are ideal for regular sharpening, while finer grits from 5000 upwards refine and polish the edge for a smoother, sharper finish.
Yes. Their firm, stable surface and consistent abrasive action make them easy to control, even for users who are still learning. More experienced sharpeners also appreciate their speed, precision and slow rate of wear. They can be used on most steel knives, including hard Japanese kitchen knives, but are not suitable for ceramic or carbide blades.
After sharpening, rinse away the residue with a brush or sponge and allow the stone to dry naturally before storing it. Do not place it in a dishwasher or drying machine. Although Kuromaku stones deform slowly, they should be flattened whenever the surface begins to become uneven to maintain accurate and consistent sharpening.
