Wusaki Migaki G3 Japanese craft knives

Discover the Wusaki Migaki G3 Japanese knives made by Japanese cutler Tsunehisa! With many years' know-how in the field of cutlery, a small team of experts is responsible for the manufacture of these unique pieces, applying all their expertise to obtain knives of the highest quality, both in terms of finish and choice of materials. The Wusaki Migaki knife is a simple model with a blade reminiscent of Western knives, but no less Japanese. In fact, the blade is called San Maï, meaning that it is composed of 3 alternating layers of steel, with a core of 0.95% carbon Japanese Ginsan steel. This alloy gives the knife a hardness of 59/60 HRC on the Rockwell scale, making it easy to sharpen with good edge retention. The knife's Japanese look comes mainly from its handle, made from enju wood, a warm-colored Asian species. Octagonal in shape, it is suitable for all cooks, right- or left-handed! The Wusaki Migaki G3 is a timeless, handcrafted Japanese knife with a design to suit every kitchen.
