The blade of the Yoshihiro Kogeta knife has a San Maï structure, i.e. it is built on 3 layers of different alloys. In the center is a core of White 2 Steel, a Japanese steel with a very high carbon content. Its advantage is that it retains its sharpness for a long time, while remaining easy to sharpen. It is then surrounded by a layer of soft iron, which sandwiches it. You can see this difference in layers on the bottom of the blade. The handle is made of light magnolia wood, with a buffalo horn ferrule. Magnolia has an oval shape that is suitable for all cooks. The special feature of the Yoshihiro Kogeta knife is the engraved kanji on the handle. They have been inscribed with a hot iron, for an extra touch of authenticity. This gives it a lot of character.
