A kitchen knife that combines technology and craftsmanship
Ambrogio Sanelli called on Italian chef Michele Cannistraro to develop the Cortello kitchen knife. The chef is nicknamed "Il Cannibale", Italian for "the Cannibal", because of his love of working with meat. The idea was to develop a multi-purpose knife with extremely precise cutting quality.
The meeting between the brand and the Chef was an obvious one, as Ambrogio Sanelli is an Italian company that has specialized in professional kitchen knives since it was founded in 1864. It uses top-of-the-range raw materials that meet the needs of professionals.
The handle, for its part, was created by Stefano Raffa, an Italian craftsman known for his work with a variety of materials to create objects that are both practical and stylish. He works with noble materials to produce objects with refined lines.
An original and versatile Nitro-B stainless steel blade
The most striking feature of the Cortello knife is the shape of its blade. It's very high and wide, an oriental shape inspired by the Chinese chef's knife, which makes it very versatile. It can be used to precisely chop and cut boneless meat, boneless fish and vegetables.
The 18cm blade is made of Nitro-B forged stainless steel, an alloy to which nitrogen has been added. This enrichment of the alloy with 0.1% nitrogen not only increases its hardness, but also its resistance to oxidation. The blade thus achieves a hardness of 57 HRC, ensuring a long-lasting cutting edge that remains easy to sharpen.
The fact that the blade has been forged also ensures a blade with reinforced strength, for extended knife life and reliable cutting.
A special heat treatment has also been applied to the steel. This is a fundamental step applied prior to forging the blade, enabling the alloy to express its full cutting potential. The result is a high-performance blade.
The blade is then sharpened on a high-tech, digitally-controlled machine, ensuring a clean, precise cutting edge. The final sharpening is done by hand on a Naniwa Japanese stone, ensuring easy cutting.
Finally, a notch is located on the heel of the blade. This is designed to accommodate your index finger, making it easier to use a knife with a high blade. It also gives the knife a unique, authentic character and identity.
A hexagonal handle in solid walnut
The handle of the Chinese chef's knife is made of solid walnut. This solid wood is resistant to damp, making it ideal for kitchen knife handles. Its golden-brown color gives it a chic appearance.
Please note that the appearance of your knife may differ slightly from the one shown here, as each piece of wood has its own unique grit.
Stefano Raffa carved it, giving it all the handcrafted care and attention he brings to his handmade objects. He also added a Macassar ebony guard, the darkest type of ebony in existence. This brings contrast to the walnut, while balancing the knife.
The handle has a highly original hexagonal shape that guarantees an excellent grip. The handle hugs your palm, offering great comfort, especially for prolonged cutting. This shape has the advantage of being suitable for both right- and left-handed cooks.
This knife should be washed exclusively by hand, taking care not to get the handle wet. Carefully dry the blade immediately after washing, before storing the knife.
The knife comes in an elegant cardboard box, with a leather blade guard for ideal storage. All components of the knife and its packaging are 100% made in Italy by Ambrogio Sanelli, making it the perfect handcrafted gift for any enthusiast.
