The blade of this Bamboo kyoto slicing knife measures 24cm, enough to cut large pieces of meat or even your tuna.

The perfect cutting performance is due to the steel used in the blade's design. To date, Tamahagane is the only Japanese cutlery company to use VG5 steel for its knives. This steel has many similarities with VG10 steel, but is more resistant to corrosion. The carbon content varies between 0.7% and 0.8%, making it even stronger. This core of solid, hard VG5 steel is surrounded by softer steel to establish an ideal balance. This softer steel protects the VG5 from impact and corrosion. This process creates 63 damascus layers, giving the knife a very pleasing appearance. As well as being attractive, it's extremely sharp, making your kitchen work faster.

Thanks to these properties, the blade has an HRC hardness of 59 on the Rockwell scale. This hardness, synonymous with quality, makes the need for sharpening far less frequent than for a conventional knife. Their service life is also greatly extended, so you'll be making a long-term investment with this kind of knife.

The knife handle is made of bamboo-effect stainless steel. Stainless steel repels corrosion and is very easy to clean, an advantage if you work in a professional kitchen. The original design of this handle is strongly reminiscent of the knife's Japanese origins. It has been sculpted to create a bamboo effect, combining steel and nature.
