This Japanese sujihiki knife, handcrafted in Japan by Tsunehisa Cutlery, is the work of a small team of experts dedicated to creating quality Japanese knives!
The sujihiki knife is a versatile model designed for perfect slicing! Its long, thin blade lets you slice your salmon finely and evenly. However, it is important not to use it on particularly hard foods such as bones or frozen foods.
The Yuzo knife with an elegant blade
The blade of this handcrafted Japanese knife is damascened, a technique that involves forging a hard steel core wrapped in multiple layers of softer steel. This process gives the blade an optimal balance of hardness, while effectively protecting its core!
The core is forged from 440C steel, a tough alloy containing around 1% carbon, the key element that reinforces the steel's hardness. With a hardness of 59HRC on the Rockwell scale, this steel guarantees excellent edge retention and outstanding cutting performance!
440C steel contains around 17% chromium, giving it excellent resistance to corrosion. However, due to its high carbon content, this blade requires careful maintenance to prevent any risk of oxidation.
Damascus is made up of several softer layers of stainless steel enveloping the rigid core. These layers add suppleness to the blade (without making it flexible) and reduce its fragility in use. They also offer additional protection to the core of the blade!
In addition to its functional advantages, damascus is an undeniable aesthetic asset! The different layers of steel are superimposed to create unique, random patterns that make each Yuzo Hamono knife truly singular.
The blade also benefits from a subtle hammered finish, adding a touch of elegance to your Japanese kitchen knife. These delicate patterns resemble splashes of water, reinforcing the refined character of this damascus knife.
A sturdy wooden handle for this damascus knife
The handle of this handcrafted Japanese knife is made from smoked oak wood, a robust and durable material. Its high density makes it particularly resistant to shock, vibration and humidity, minimizing the risk of warping. The smoking process gives baikoku oak a dark hue that accentuates its natural grain, giving your damascus knife a unique, authentic character!
The octagonal handle is suitable for both left- and right-handed users. It offers an ergonomic grip and optimal control, even during long cutting sessions in the kitchen.
To ensure a perfect seal, wood paste has been applied to the junction between blade and handle. This prevents the ingress of water or small food residues.
To preserve your Japanese knife, wash it only by hand with a soft sponge, without wetting the handle. After cleaning, dry immediately to remove any moisture and store in a dry place. Do not put in the dishwasher or soak in water.
