A compact blade for precise cuts
Handcrafted in Japan by Tsunehisa Cutlery, this Yuzo Enju Damascus 440C Japanese paring knife is perfect for detailed work in the kitchen. Its 8-cm blade is particularly well-suited for peeling, trimming, cutting fruit, and other tasks that require precision and control.
Precise and durable Damascus steel
The blade features a Damascus steel structure, consisting of a 440C stainless steel core surrounded by outer layers of stainless steel. This construction creates unique ripples that are distinct to each knife.
440C steel is known for its excellent corrosion resistance and its ability to maintain a sharp edge. With a hardness of 59 HRC, the blade offers a good balance between edge retention, durability, and ease of maintenance.
Its flat grind promotes a consistent cut and makes sharpening on a whetstone easier. The very delicate hammered finish adds a subtle texture to the blade’s surface, while enhancing its artisanal aesthetic. The 8-cm length allows for precise, delicate work on small foods without hindering short, precise movements.
A natural, octagonal-shaped handle
The handle of this Yuzo artisanal paring knife is made ofsmoked oak, a dense and sturdy wood whose hues and grain vary from piece to piece. It is prized for its high mechanical strength and stability. As a result, each knife has its own unique appearance.
Its octagonal shape ensures a stable and comfortable grip. This symmetrical design is suitable for both right- and left-handed users. It also allows for better finger placement and control of the blade when peeling, trimming, or making fine cuts.
The smoked oak provides a warm finish that harmonizes with the ripples of the Damascus steel. The set combines traditional Japanese craftsmanship with carefully selected natural materials.

Usage and Care Instructions
Use your knife on a wooden cutting board or a soft surface. Avoid bones, frozen foods, and hard surfaces. Wash the knife by hand with a soft sponge, then dry it immediately. Do not put it in the dishwasher to preserve the Damascus steel and the wooden handle. Store it in a knife block, on a suitable magnetic strip, or in a sheath. Sharpen the blade regularly with an appropriate whetstone.
The Craftsmanship of Tsunehisa Cutlery
Tsunehisa Knives hand-forges its knives in Japan, following traditional Japanese manufacturing methods. Its creations combine carefully selected steels, handles made from natural materials, and meticulously crafted finishes.
Each step contributes to giving the knife its unique character: preparing the blade, shaping the handle, honing the edge, and finishing the surface. The patterns of the Damascus steel and the hues of the smoked oak vary naturally from one piece to the next. This craftsmanship gives each knife its own unique visual identity, while maintaining a design suited for everyday use in the kitchen.
