Its stainless steel blade is wide, enabling you to cut large pieces of meat. The blade is perfectly smooth thanks to mirror polishing. This technique facilitates cleaning and prevents rust. Stainless steel is enriched with chromium and molybdenum, a further advantage in the fight against corrosion. To improve cutting performance, the blade is vacuum-hardened using an ultra-modern process.
With a hardness of 56 HRC, the blade is easy to sharpen on a daily basis using a Fischer or Dick sharpening steel, for example.
Each blade is grinded, then a master sharpener finishes the knife by hand, for an exceptional edge.
