Description

Nakamura is a Japanese company founded in 2015, born out of an artisanal manufacturing workshop. Its aim is to bring together the best Japanese sharpeners and blacksmiths to design kitchen knives that are both elegant and ultra-high-performance. With this in mind, the Kaishin (魁心) brand was born."Kai" (魁) means "pioneer", while "Shin" (心) symbolizes "spirit". This spirit of innovation guides the Nakamura Kaishin brand in the manufacture of exceptional Japanese knives!

This yanagiba kiritsuke is the result of the craftsmanship of Shogo Yamatsuka, a renowned blacksmith from Sakai. Having grown up in a family of blacksmiths, he naturally turned to the craft as his father's apprentice. Specializing in Ginsan steel, Yamatsuka-san passed on to him all the subtleties of this high-quality alloy. Determined to excel in his art, Shogo devoted almost three decades to perfecting the unique hot-forging of Ginsan steel. His commitment and expertise have been rewarded by the Japanese Ministry of Economy, Trade and Industry, which has awarded him the prestigious title of Master Traditional Craftsman.

To bring out the very best in this blade, the sharpening was entrusted to the experts at Fujii Hamono. Headed by Fujii Keiichi, this company uses large grinding wheels to shape an exceptionally precise edge. Thanks to their expertise and meticulous workmanship, Fujii Hamono's craftsmen guarantee a clean, efficient cut that meets the exacting demands of chefs and cooking enthusiasts.

The Japanese craft knife with refined damascus

This yanagiba kiritsuke knife features a 27cm damascus blade. Its design is based on a hard steel core, enveloped by several layers of softer steel to protect it. This structure ensures an ideal balance: the rigid core guarantees a long-lasting edge, while the outer layers provide flexibility, reducing the risk of breakage during use.

Damascus is not only functional, it also adds an aesthetic dimension! The superimposition of steel layers creates unique patterns on every Nakamura knife. On this handcrafted Japanese knife, the damascus is subtle, adding an extra touch of elegance.

The core of this blade is made of Japanese Ginsan stainless steel, also known as G3 or Silver 3. This alloy contains around 0.95% carbon, ensuring ideal hardness and rigidity for long-lasting sharpness. With a chromium content of 13.5%, it offers excellent resistance to corrosion. With a hardness of 59/60 HRC on the Rockwell scale, maintenance is simple: just stone-sharpen to restore its original sharpness!

Theasymmetrical cutting edge of this Japanese kitchen knife is typical of yanagiba knives, making it particularly suitable for right-handed use. It enables precise slicing in a single movement, ideal for fine, even cuts!

Each blade is hand-engraved with the "Kaishin" kanji, underscoring the unique, handcrafted character of this Japanese knife. What's more, your blade has been polished for an elegant finish.

An exceptional Japanese knife with an elegant handle

This Japanese kitchen knife features an octagonal-shaped handle, designed to provide an ergonomic grip. Its design suits all cooks, guaranteeing optimal comfort, even during prolonged use!

The handle is made from magnolia wood, a noble species renowned for its robustness and natural resistance to humidity. Each piece of wood has unique light shades with varying degrees of veining, making each Kaishin knife truly unique.

A bolster provides the transition between the blade and the handle, reinforced with wood pulp for optimum watertightness. Made from white buffalo horn, a natural material, the bolster lends a touch of originality and elegance to your damascus knife. Its refined color further enhances its aesthetic appeal!

To preserve the quality of your damask knife, it's essential to wash it only by hand, with a soft sponge and non-abrasive soap, avoiding excessive immersion of the handle. After washing, dry carefully with a clean cloth and store in a dry place. Do not use the dishwasher, and never leave the handle to soak in water.
