Japanese knives feature a superb damascened blade, a true jewel of engineering and craftsmanship. It combines two complementary steels, VG10 and VG2, in an innovative Dual Core design. VG10, rich in carbon (1%) and chromium, offers a unique combination of strength and corrosion resistance. The addition of the more flexible VG2 gives the blade a perfect balance between strength and flexibility.
This Dual Core blade is enhanced by a magnificent 72-layer damascus, an alternation of hard and soft steel layers designed to give the blade greater strength, reaching a hardness of around 61 HRC on the Rockwell scale. Despite this high hardness, the knives remain easy to sharpen with a stone when the need arises. What's more, the damascus finish is highly aesthetic, forming unique undulations across the entire cutting surface.
The Kai Shun Kohen knife set features handles made from pakka wood, a premium material that combines laminated wood and hot-compressed resin. This blend of materials offers natural antibacterial properties, enhanced resistance to water and temperature variations, ensuring optimal durability.
Red in color, Pakkawood is highlighted by a superb black veining that adds a special, high-end touch to your Kai Shun Kohen knives. The bolster and base of the knives are made of stainless steel, giving them excellent balance. The bolster features the knives' serial number, and the base is engraved with a superb kanji echoing the one on the blade.
This top-of-the-range Japanese knife set comes in a high-quality aluminum case. It's light but very sturdy, ideal for storing your knives. Its corners are reinforced for added strength. Two clips ensure that the case closes securely, for safe knife storage. A handle completes the case for easy transport.
The inside of the case is foam-filled to hold your Japanese knives. A space is provided for each knife, so that they won't move when stored. So they don't clash or get damaged.
Two leather sheaths are also supplied to further protect the knife blades. Elegantly black in color, these sheaths feature the same kanji as the knives, marking their belonging to the range. They close with a snap fastener at the heel of the blade, so they stay perfectly in place.
To clean your knives, never put them in the dishwasher or leave them to soak in the sink. Instead, wash by hand with a non-abrasive sponge and a mild detergent. Dry your knives immediately before storing them in their case.
