The Kai Shun Classic knife reinvents itself
Kai has revisited its famous Shun Classic range with this Red santoku knife. It features a deep-red Pakka wood handle contrasted by an elegant black grain, instead of the traditional black handle. This adds a highly elegant touch to the knife.
What's more, this knife is available in a limited edition: only 3,000 are in existence worldwide! Each knife has a serial number affixed to the bolster. A knife not to be missed!
The high-performance santoku by Kai
This santoku features a 19cm blade ideal for a wide range of cuts. You can slice, chop or chisel all types of food. Whether it's meat, fish, vegetables or herbs, the santoku is the multi-purpose knife par excellence.
Its blade features a 32-layer damascus structure. Damascus consists of forging a core of rigid steel, which is then enveloped in several alternating layers of soft and hard steels. These layers are superimposed to create optimum balance, while offering additional protection to the core of the blade. The damascus layers also give the blade a uniquely elegant look.
The heart of the blade is made from VGMAX steel, a specific alloy concentrated in cobalt and carbon. This steel offers enhanced strength and corrosion resistance. The blade's hardness reaches around 61 HRC on the Rockwell scale, guaranteeing a high-performance cutting edge that lasts.
The cutting edge has been worked into a convex shape and then hand-sharpened, giving you its high efficiency. When the need arises, you can sharpen the knife with a stone.
An antibacterial santoku knife
The knife's handle is made of pakka wood, a high-end material composed of laminated wood and resin, all heat-compressed. Pakkawood is renowned for its antibacterial properties and resistance to water and temperature variations.
The specific "D" shape of the handle is designed to fit the palm of your hand perfectly, offering optimum ergonomics and reducing fatigue during prolonged cutting.
The stainless steel bolster forms the link between the blade and the handle, making the knife watertight and providing excellent balance.
We recommend washing your knife by hand with a non-abrasive sponge. Once washed, dry the knife immediately and store it in a dry place. Do not leave it to soak in the sink, and do not put it in the dishwasher.
