This Tamahagane chef knife is part of the Kyoto range.
Tamahagane is the traditional steel used by the Japanese to make swords. It's easy to deduce that these knives have a cutting edge worthy of a Samurai sword!
The perfect cutting quality of this knife is achieved thanks to the VG5 steel used in the design of the blade. This 3-layer VG5 steel core has the same qualities as VG10 steel, but contains slightly less cobalt. However, VG5 is more resistant to corrosion, a considerable advantage. The cutting edge is identical to that of VG10 steel blades - in other words, it's excellent! Everyone dreams of cooking without having to exert the slightest effort on the blade, and this is entirely possible with this type of extremely hard, solid steel.
This extremely hard core is covered by 63-layerSUS410 steel , which is softer and more resistant to corrosion. These outer layers create the damascus pattern typical of Japanese knives. These damascus patterns make these knives little jewels.
The blade of this knife achieves an HRC hardness of 59 on the Rockwell scale. This means you'll need to sharpen your knives less often than conventional knives, and their durability is increased tenfold.
The handle is made of micarta, a composite material combining paper and resin. This material is extremely robust: it is water-resistant and resistant to temperature variations. It is also antibacterial, a considerable asset for professionals. Its dark, light-veined color adds a touch of originality in perfect contrast to the damask.
This knife has been designed for professional and amateur cooks looking for long-lasting, precise cutting quality. Its sharp edge makes it comfortable to hold, and much less tiring when used intensively.
Finally, this knife comes in an attractive black presentation box, ideal as a gift for a loved one (or for yourself)!
