Description

This Kai Michel BrasBread knife will help you slice bread efficiently without damaging its appearance!

Michel Bras is a world-renowned chef known for his "creative" cuisine at his three-starred restaurant in Laguiole. He is popular as far afield as Japan, where he also runs an equally prestigious restaurant. The collaboration between Kai and Michel Bras was therefore a natural one, as the chef wanted to offer high-performance, durable and aesthetically pleasing knives and Utensils that would delight professionals and private individuals alike.

Kai Michel Bras knives are a perfect compromise between aesthetics, efficiency and durability. Michel Bras wanted to offer knives that are easy to sharpen, comfortable to use thanks to an ergonomic handle and well-balanced weight (neither too light nor too heavy), yet beautiful to look at like a real jewel. When you choose this range of knives, you're opting for tools designed by a great name in the culinary arts from quality materials and made in Japan.

This Bread knife is ideal for slicing through the hard crust of bread to obtain beautiful, even pieces. Its large blade can also be used to slice brioche, focaccia, sliced bread or pineapple. What could be better than a bit of bread to accompany a salad, cheese or as a garnish?

The 28.5m blade is made of VG10 steel, an alloy considered one of the best in the world. Thanks to its high corrosion resistance and chromium content of over 13%, it belongs to the family of stainless steels. This grade of steel is used in the manufacture of many tools thanks to its razor-sharp cutting edge. This is due to its high carbon content, which ensures a good level of hardness for a high-quality cutting edge. In addition to chromium, molybdenum enhances the blade's hardness and resistance to impact and corrosion. Finally, vanadium and manganese also enhance resistance to wear and abrasion.

The result is 63 HRC on the Rockwell scale, for a razor-sharp edge that remains durably sharp after several uses. The 3 layers of steel provide enough strength and flexibility for a good compromise between ease of sharpening and good edge retention. You can maintain the blade with a Sharpening stone if required. Be careful, however, not to use the knife on excessively hard foods, such as bones, to avoid weakening the blade.

The blade has a titanium coating that protects the steel and makes it non-stick for optimal cutting.

For a superb finish, the brand name is embossed on the cutting surface. The back of the blade features a cistre leaf, the emblem of Michel Bras' cuisine. This is a wild herb that grows on the Aubrac plateaus and is often found on the menu of his restaurant.

The handle is made from composite wood for maximum strength and easy maintenance. It is neither too light nor too heavy to maximize comfort of use.

Michel Bras drew inspiration from Japanese tradition by proposing a "chestnut" shape for the handle. The result is an ergonomic handle that conforms to the shape of your hand without tiring it, despite repeated use.

The stainless steel Bolster and base further strengthen the handle. The base is engraved with the name of the Michelin-starred chef.

The knife comes with a wooden scabbard, the designer's intention being to present it in a beautiful case, once again like a piece of jewelry. A sharpening guide is also included to help you sharpen the knife if necessary.

Care and maintenance :

Clean the knife by hand (never put it in the dishwasher) and wipe with a dry cloth immediately after cleaning. You can then store it carefully on your magnet bar, in a block or in a drawer after putting it in its sheath.
